Watermelon is composed mainly of water (91%) and carbohydrates (7.5%). It contains almost no protein or fat and is a low-calorie fruit.
Watermelon is a good source of vitamin C and a source of other different vitamins and minerals, it contains fair amounts of potassium, copper, vitamin B5 and vitamin A.
The optimal ripening period of the watermelon is very short and the changes that take place in the fruit are very rapid, in about ten days it goes from an immature stage to an overripe one. The ripening of the fruits (peponides) is scalar and the harvest takes place on average in 2-4 steps with weekly intervals.
Harvesting of the fruits on mulch begins after 75-100 days after transplantation and lasts up to 4 weeks. Size, shape, color and texture are characteristic for each specific variety.
